For a first visit, I would book the daylight side of the experience. The view is easier to read, photos require less compromise, and you are less dependent on one narrow weather-and-light window. Late afternoon is better for couples or friends who care more about mood than geographical detail and are happy to let the visit stretch into drinks or dinner.
There is one practical reason not to leave this completely spontaneous: The Jungle Club’s current restaurant page asks outside guests to make table reservations at least three days in advance and says last-minute bookings are not accepted. The restaurant currently lists opening hours of 08:00–23:00.

In stronger daylight, the coastline, green hills and Chaweng below are the main event. That makes lunch the safer choice for a first-timer, a photographer who wants recognizable landscape rather than atmosphere, or anyone pairing The Jungle Club with another Chaweng-area stop.
Lunch also leaves more recovery room if cloud, rain or haze softens the view. You can eat, wait for a brighter patch, and still move on with the afternoon.
Choose late afternoon for the transition
The venue’s own description leans into cocktails, beanbags and watching the island illuminate as the sun goes down. That is the real evening proposition: not just one instant of sunset, but the transition from warm light to illuminated Chaweng.
If your holiday brain translates “sunset drinks” into a perfect orange sun dropping over the ocean directly in front of you, reset the expectation. The Jungle Club is above Chaweng Noi on Samui’s east side; the strongest reason to come late is the changing atmosphere and lights, not a guaranteed west-facing horizon sunset.
The seat matters almost as much as the time
The current restaurant page offers two broad settings: colorful beanbags on open wooden decks or more conventional seating under the main straw dining room. Do not treat “Jungle Club reservation” as shorthand for a guaranteed edge beanbag. The current GetYourGuide transfer listing is explicit that the best available tables are assigned and outdoor beanbags can be requested but are subject to availability.

The harder decision is actually how you get back down
The Jungle Club sits up in the Chaweng Noi hills. That is the whole reason the view works, but it also means you should think about the return before the first drink. The exact mechanics can change, so confirm the arrangement you are actually using rather than assuming any taxi will handle the final steep approach in the same way.
